Quinoa Salad
- 3 Cups Cooked Quinoa
- 1 Red Pepper chopped
- 1 Cucumber Chopped
- 1 Cup sliced grape tomatoes
- 1 Cup Kalamata Olives
- ½ – 1 Cup chopped Parsley
- 1 Tbsp Dill
- Mix all together in a bowl
Dressing
- ½ Cup red wine vinegar
- ½ Cup Olive Oil
- 1 tsp Honey
- 1 tsp Oregano
- Optional – Chopped or grated garlic
Whisk all the dressing ingredients in a bowl and pour over the salad. Serve cold.
