Quinoa Salad

  • 3 Cups Cooked Quinoa
  • 1 Red Pepper chopped
  • 1 Cucumber Chopped
  • 1 Cup sliced grape tomatoes
  • 1 Cup Kalamata Olives
  • ½ – 1 Cup chopped Parsley
  • 1 Tbsp Dill
  • Mix all together in a bowl

Dressing

  • ½ Cup red wine vinegar
  • ½ Cup Olive Oil
  • 1 tsp Honey
  • 1 tsp Oregano
  • Optional – Chopped or grated garlic

Whisk all the dressing ingredients in a bowl and pour over the salad.  Serve cold.
